5 slices bacon, diced 1 cup diced chicken breast 5 green onions, chopped 4 medium ears of corn 1 tsp paprika 1/4 tsp salt 1/4 tsp black pepper 4 large green peppers 1 cup soft bread crumbs 2 tbsp butter or margarine
Fry bacon until crisp. Pour off all but 2 tbsp of fat. Saute chicken in the fat, stir to cook evenly. Add onions, corn, paprika, salt, and pepper. Cover and cook over lo heat for 5 minutes. Slice each pepper in half lengthwise. Remove seeds and cut off stems. Place pepper shells in an oiled baking dish. Fill with the chicken mixture. Mix crumbs with butter, crumble over tops. Bake, covered at 350 for 30 minutes or until peppers are tender yet firm.
